What I Ate for Dinner Last Week

I’m always morbidly curious about the mundane details of other people’s lives.  How exactly do we all live?  Figuring you’re like me, or at least you like me, I thought I’d let you take a peek at my dinner plate.  If you want a recipe, let me know.

Monday: Herbed Salmon over French Lentil Salad

Tuesday:  Bistro Cannellini Beans with Crustry Bread

Wednesday:  Japanese Cucumber Salad and Shrimp Yakisoba

Thursday: Strawberry Spinach Salad with Balsalmic Vinagrette and Garlic Mushroom Omelette

Friday: Mahi Mahi Tacos with Black Beans, Salad and Orange Slices

Saturday:  Pizza, French Fries and a Shake!  Whole Wheat Pizza Margherita and Carmelized Onion Flatbread with Golden Raisins, Thyme and Preserved Lemons and Baked Sweet Potato Fries and a Papaya- Mango Smoothie made from our own harvest and Greek Yogurt

Sunday: Raw Sweet Potato Salad

I have been trying to lose weight, so I’ve added extra veggies and beans to our diet.  This is what the kids eat with the exception of a Caprese Pasta Salad that they ate on Sunday night’s picnic.  I ate a slice of leftover pizza for lunch that day and since my diet is to have one meal be just a salad, I had to forgo the pasta.
