Watermelon, Cucumber and Feta Salad

This luscious summer salad recipe was given to me by Top Chef contestant Andrea Beaman. Crisp, fresh and juicy, it is the perfect antidote to all this heat.  It is lovely served along side onion pizza or grilled shrimp.  I have made watermelon feta salads in the past, but the Greek twist with fresh oregano and kalamata olives really makes this special.  Be sure to make this just before serving or you will have a big juicy puddle at the bottom of your bowl.  For more of Andrea’s healthy recipes you can check out her website. 

Watermelon Cucumber and Feta Salad

Watermelon, Cucumber and Feta Salad
 
Ingredients
  • 2 c cubed watermelon (The taste is so much better if you buy a traditional watermelon, not seedless.  The effort of seeding it is made up for in flavor.)
  • 1 cucumber, peeled, seeded and diced
  • 2 oz. fresh oregano
  • 3-4 kalamata olives, pitted and chopped
  • ¼ c olive oil
  • 1 t fresh oregano
  • sea salt
  • black pepper
  • baby greens
Instructions
  1. Place watermelon, cucumber, feta and olives in a bowl.
  2. Whisk together the remaining ingredients, seasoning to taste.
  3. Toss dressing with salad and serve immediately over greens. Enjoy!
